where the eating's good: honey rhubarb muffins

I am bummed I don't have a picture to entice you. They were all eaten too fast!

slap-yo-momma Honey Rhubarb Muffins

1 egg
1 cup brown sugar
2/3 cup oil
1/2 cup honey
1/2 teaspoon vanilla
3/4 cup soured milk
2 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cup fresh rhubarb pieces

Blend the wet stuff with the brown sugar. Sift the dry stuff. Mix together and fold in rhubarb. Place in greased muffin tins and sprinkle muffin tops with mixture of 1 tablespoon of softened butter with 1/2 cup sugar. Cook in moderate oven until done (pick your own oven temp - my oven decides for itself!). Would be delicious served warm with honey butter, but don't stress over it. They are fantastic without too. Recipe makes about a dozen. Enjoy!
