where the eating's good: strawberry bread

Once a week a lovely Papua New Guinean woman brings a bucket full of strawberries to the hostel. They cost about seven bucks. Most of the time, we just inhale and gorge ourselves on their sweet deliciousness. But I really wanted a way to stretch the things. Make them taste good for longer. So I hunted down and gave this recipe a try:

oh-so-yummy strawberry bread

2 cups hulled strawberries tossed in 1/2 cup sugar
3 cups flour
1 3/4 cup sugar
1 t cinnamon
1 t salt
1 t baking powder
3 eggs
1 cup oil

Set the strawberries and sugar mixture to the side. Mix dry ingredients. Beat eggs and oil together and mix into the dry ingredients. Finally mix the strawberries in. Place batter in two greased loaf pans. Bakes in moderate oven for about one hour. Delicious with strawberry butter made from 1/2 cup butter, 2 T powdered sugar and 3 finely chopped strawberries.

So good (and easy) that I am making two more loaves today since the ones from less than 24 hours ago are gone!

  1. To keep the berries from sinking to the bottom, toss them in a few Tbs of flour - then you will have berries throughout the bread - not just on the bottom!
